Celery is more than diet food. It is high in water, potassium and is an excellent source of Vitamin C,
some Vitamin A, calcium and protein. It contains low calorie bulk dietary fibre and some active compounds that relax muscles of the arteries.
Celery is tasy enough to munch on raw but is a great addition to salads, stirfry, stew, casseroles,soups
and juices. Both the stalks and the leaves can be eaten. The leaves actually contain most of the nutrients but dont store well so should be eaten fresh.
It is the quintessential diet food, requiring more calories to digest than it provides, whilst still delivering vitamins and minerals.
Try plunging the stalks and leaves in salty ice water for a couple of minutes, then drain and dress with good olive oil, lemon juice and salt. Add some pine nuts and cherry tomatoes and cracked pepper.
Celery wilts easily at room temperature, so keep it in the refrigerator in a sealed container. If it has wilted, sprinkle some water on it and place back in the fridge to regain crispness.
